Reg Wall, the colourful proprietor has been making fudge at the same location
for over 36 years.
The Fudge
Our 18 flavours of special home made fudge contain 18% cream & butter and
is made by hand in 30 lbs segments.
The Fudge Making Process
The first stage of the process is to mix all the natural ingredients into
a large copper pot. The fudge mixture is then heated. The cooking process takes
approximately 18 minutes.
Pouring the Mixture
When the fudge reaches the required temperature, it is then poured on a large
marble slab. Reg then lets the fudge cool a few minutes.
Mixing in Special Flavours
Reg uses a large spatula to mix in a variety of special ingredients for flavouring.
In this case, a Baileys flavouring additive is added to the base fudge mix. The
large spatula also is used to thicken the fudge.
"Molding the loaf"
Afterwards the fudge is then mixed back and forth with small spatulas until
it starts to thicken. Then technique is applied until the fudge is formed into
a long 30 lbs log.
Unlike other shops, no molds are used during the process. In addition,
Reg refuses to use artificial additives.
Slicing the Fudge
After solidifying, the fudge can then be cut hot into 1/2 lbs slices. The
fudge is finally wrapped into saran wrap.
